Artichokes: quick recipes to consume them more often

With only 22 kcal per 100 grams, artichokes are friends of the figure and boast a wide range of beneficial effects on the body: thanks to the high content of fibre, polyphenols, carotenoids, flavonoids and vitamins, in fact, the artichoke helps to fight free radicals, lower LDL cholesterol, regulate intestinal activity, lower blood sugar and protect liver function. To consume them more often during their natural season, Inserbo offers you some simple and light recipes with an unbeatable taste.

Artichokes: light recipes for everyone

You can do almost anything with coupons artichokes: recipes baked , pan-fried, steamed or preserved. Here is a selection of light recipes with artichokes not to be missed:

Light pan-fried artichoke recipe

(doses for 4 people)

  • 8 medium tender artichokes
  • 1 sprig of parsley
  • 2 cloves of garlic
  • 2 organic lemons
  • salt and EVO oil (to taste)

To cook artichokes in a pan in a simple, quick and light way, simply clean them from the hard parts, cut them into thin slices and place them in a pan with two glasses of warm water, the juice of the first lemon and the second one cut into wedges. Add salt and cook for about twenty minutes over high heat, adding a little water if it runs out. When the artichoke segments are soft, let them dry over high heat and add a drizzle of EVO oil and the parsley. Cook with the lid on for another two minutes and serve the artichokes as a side dish or as a condiment for a first course such as grandma's pasta and artichoke recipe in a light version.

Light baked artichoke recipe

(doses for 4 people)
If you love a rich and tasty proposal like the classic one baked artichoke and potato recipe , this light version will win you over:

  • 8 artichokes
  • 2 tablespoons of breadcrumbs
  • aromatic herbs to taste (parsley, basil, marjoram, oregano, thyme...)
  • 1 clove of garlic
  • salt and EVO oil (to taste)

After cleaning the artichokes and cutting them into quarters, cook them in boiling water for 8/10 minutes. In the meantime, prepare the breading by mixing the breadcrumbs with the chopped garlic clove, aromatic herbs and spices of your choice. Drain the artichokes, massage them with a little EVO oil and dip them in tasty breadcrumbs, then cook them in the oven at 180° for about 20 minutes.

Recipes with artichokes in oil
